HVP can provide amino-acid-rich savory depth in soy-sauce-style formulations, but it does not reproduce every component created during soy sauce fermentation. Brewed soy sauce also carries fermentation-derived acids, alcohols and aroma compounds that influence its characteristic profile.
For formulators evaluating HVP for soy sauce replacement, the useful question is not “Can HVP replace soy sauce?” but which functions of the soy sauce are being replaced, and which fermented characteristics still need to be supplied elsewhere.

What Soy Sauce Functions Can HVP Actually Replace?
A brewed soy sauce contributes several functions to a finished food. HVP overlaps with some of them directly:
- Savory and umami depth: the free amino acids and peptides of an HVP provide the amino-acid-rich savory character that soy sauce also carries.
- Salt contribution: HVP grades can contribute significant sodium to the formula. In acid-hydrolyzed products, part of that salt can result from the neutralization step, so the actual salt contribution should be taken from the selected grade specification.
- Color and solids contribution: depending on the grade and use level, liquid HVP can contribute color and dissolved solids that affect the overall sauce body.
What an HVP does not automatically reproduce is the broader fermentation-derived character of brewed soy sauce, including fermentation-derived alcohols, organic acids and aroma-active volatile compounds formed during fermentation, with contributions from koji molds, lactic acid bacteria and yeasts in many traditionally brewed soy-sauce processes. Organic acids also affect acidity, taste balance and the overall fermented character, not only aroma.
HVP-Based and Brewed Soy Sauce Are Not Chemically Equivalent
Brewed soy sauce is produced through microbial fermentation of protein- and carbohydrate-containing raw materials, commonly including soybeans and wheat depending on the style. Acid-hydrolyzed HVP, by contrast, breaks down protein directly through hydrolysis rather than fermentation. Studies comparing traditionally fermented and acid-hydrolyzed soy-sauce systems show clearly different volatile profiles: fermented systems develop alcohols, organic acids and a complex aroma background through microbial activity, while acid-hydrolyzed systems follow a different chemical pathway and produce a different aroma profile (chemical and sensory characteristics of soy sauce).
This does not make one route better or worse. It means replacement should be defined by finished-product performance: which functions must match, which may differ, and what the target food tolerates. Where the fermented character itself is the product, an HVP-based system will not be a silent swap.

Replacement, Extension and Savory Adjustment Are Different Jobs
HVP can enter a soy-sauce-style system in three roles, and they should not be confused:
- Savory base: the HVP carries most of the amino-acid savory character, with color, acid, sweetness and aroma supplied by the rest of the formula.
- Extension with brewed soy sauce: the HVP is combined with fermented soy sauce, keeping part of the fermented character while changing the volume and cost structure of the formula.
- Savory adjustment: the HVP is added at a low level as one savory ingredient among several, without replacing the sauce function at all.
The workable ratio is determined by the sensory and labeling targets, not by a universal extension percentage. Product naming and brewed or fermented claims follow the rules of the destination market, so what a product can be called should be confirmed against the applicable labeling requirements rather than assumed from the formula.
Choose the Grade From the Target Sauce, Not From the Source Name
Candidate HVP grades for sauce systems are compared on nitrogen specification, salt contribution, color, sensory direction, allergen constraints, dosage and performance in the finished sauce. Nitrogen figures describe the grade; they do not by themselves determine which grade will taste stronger or fit a sauce target better.

Replacing Soy Sauce Also Changes the Ingredient Statement
In the United States, the common or usual name of a protein hydrolysate must identify the protein source. “Hydrolyzed vegetable protein” and “hydrolyzed protein” are not acceptable names, while names such as “hydrolyzed soy protein” or “hydrolyzed corn protein” are (21 CFR 102.22).
Switching from brewed soy sauce to an HVP-based system can therefore change both the ingredient statement and the allergen declaration. In the United States, hydrolyzed soy protein identifies soy as the protein source, and soybeans are a major food allergen. Requirements in other markets should be confirmed against the destination-market rules, and any soy-free or allergen-related claim needs complete ingredient and cross-contact verification.
Evaluate at Equivalent Finished-Sauce Performance
The comparison between a brewed soy sauce and an HVP-based system should be run in the finished sauce at the intended dosage. Taste, aroma, salt, color, acidity, sweetness, viscosity and behavior through the heat process all need to be checked together, because a change in one ingredient can shift the balance of the whole formula.
Cost belongs in the same frame: compare the cost of reaching the same finished-sauce target, including dosage and any additional flavor, acid, color or sweetener adjustments the HVP route requires. A per-kilogram comparison between soy sauce and HVP alone does not describe the economics of the finished product.

Where HVP Fits in Asian-Style Seasoning Bases
HVP can provide part of the savory backbone in teriyaki-, oyster-sauce-, barbecue- or stir-fry-style formulations, while the finished regional character also depends on fermented ingredients, sugars, acids, aromatics, spices and other flavor components.
